Mimi is a dietitian-nutritionist and diabetes educator. Currently she is a contractor with S&S Nutrition working for Intermountain Hospital in Boise with behavioral health patients who have diabetes. Most recently she was the Program Manager for the Idaho Diabetes Prevention and Control Program and the Idaho Oral Health Program. She has worked for the H.J. Heinz Company test kitchens, taught French cooking and has been a supermarket dietitian and out-patient dietitian. Currently she is exploring a focus in culinary medicine. Mimi is on the board of directors of the Idaho Food Bank and is passionate about addressing food insecurity and nutrition. You can find her in the kitchen or with her husband photographing the outdoors and travel adventures.
She holds a BS in Food and Nutrition Science from Carnegie-Mellon University and masters degrees in nutrition education and counseling psychology from Immaculata University.
