The Flavor Bridge shows how we can add flavor to food without leaning on fat and sodium – traditional flavor boosters. By using fresh and umami rich ingredients, we can boost the flavor of food in a delicious and healthy manner. Chef Dave will show attendees five methods to achieve this. Demo one will show how salsas add a clean fresh addition to beef. Demo two will show how simple aromatic ingredients like carrots, onions and celery boost flavor in braised dishes. Demo three will show how reducing flavored vinegars intensifies flavor. Demo four will show how both dry and paste rubs help add flavor to steaks and roasts. Demo five will show how marinades do double duty to add flavor and tenderize less tender cuts of beef.
