Gary Fornshell will talk about aquaculture (fish farming) and the importance of aquaculture supplying seafood for a growing world population, health benefits of seafood including benefits associated with omega-3 fatty acids, and whether or not there are nutritional and health benefit differences between wild and farmed seafood. Dr. Overturf will be presenting how fish can be selectively improved to enhance their nutritional qualities. Along with making aquaculture more sustainable and increasing production Dr. Overturf will describe how he uses his research to generate models that can be used to dissect the physiological mechanisms behind metabolism and the processing of specific dietary components in fish.
